What’s for Breakfast: Hearty Oatmeal Pancakes and Iced Coffee

I woke up this morning hungrier than usual.  I knew my usual PB&J on wheat toast wasn’t going to cut it.  I was pondering of what I could make, and pancakes came to mind.  Last week I made some protein pancakes for lunch that I found from one of my favorite blogs, but this morning I decided to nix the protein powder and go heavier on the oatmeal.  This is what I came up with:

Hearty Oatmeal Pancakes

Ingredients:

1 cup oatmeal (uncooked)

1/3 cup whole wheat flour

1 cup vanilla soy milk

3 tablespoons brown sugar

2 tablespoons natural applesauce (no sugar added)

1 teaspoon baking soda

Directions:  Mix all the ingredients together.  Cover griddle with cooking spray and preheat it on low-medium heat.  Measure out 1/4 cup of batter and pour on hot griddle.  When top of pancake starts to bubble, flip over until fully cooked.  Take off of heat and enjoy!  Top with syrup, powdered sugar, nut butter, fruit, nuts, or any topping of your choice!  Makes about 6 three-inch pancakes (3 servings).

I topped mine with a swipe of Adam’s Natural Crunchy Peanut Butter and a drizzle of low-calorie maple syrup.  oh. my. goodness!  These were delicious.  Definitely a new favorite breakfast item. 

I paired my pancakes with some iced coffee and I was set!  Iced coffee has become one of my new summer staple drinks.  I used to get them at Starbucks all the time.  Now I’ve realized I can just as easily make it at home for only a fraction of the cost that I paid at Starbucks. 

Iced Coffee

Ingredients:

12 cups brewed coffee

Splash of 1% milk or vanilla soymilk

1 teaspoon of sweetener (Splenda, Truvia, sugar)

1/2 cup ice cubes

Directions:

Brew 12 cups of coffee.  Let coffee pot cool.  Pour coffee into large pitcher and place in refrigerator.  After a few hours, pour a glass of the chilled coffee into a cup.  Add the milk and sweetener and stir well.  Add the ice cubes.  Enjoy!  Makes 6 two cup (16 oz.) servings.
