The Smell of Pumpkin Muffins Baking in My Oven is Heavenly!

If you’re friends with me on Facebook or a “fan” of My Food ‘N’ Fitness Diaries Facebook page, you probably saw that my status was similar to this post’s title.  Let me just tell you how amazing my house smelled last night.  I just wanted the entire world to come into house so they could smell how heavenly it truly was! 

Yesterday I went perusing through tons of “foodie” blogs trying to find the “perfect muffin” for my meeting this morning.  (I have a church team leader meeting, and I promised them muffins.)  I couldn’t possibly resort to a boxed muffin mix if I had all of these fabulous blogger’s recipes right in front of my face.  Let me tell you, it was a HARD decision!  I probably had at least ten different muffin recipes open trying to decide which one to make.  They all looked so good!  I am a sucker for pumpkin, as well as Tina’s blog, Carrots ‘N’ Cake, so her’s won (once again 🙂 ).  I just love her healthy, but can’t-really-tell-they’re-healthy recipes. 

I whipped up the muffin mixture.  (Extra bonus: this recipe is super duper easy!)

I popped them in the oven for about 18-20 minutes, enjoyed the heavenly aroma that floated around my house, and TA-DA!! 

These little babies smelled great, they looked great, and they tasted great!  Even better too, they use very natural, good-for-you ingredients.  Make sure to check out the recipe here!

When they cooled off, I packed them up in their tupperware so they’re ready to go this morning.  (Notice there’s only 11 rather than a dozen?  That’s obviously because I had to “test” one to make sure they were worthy of eating. 😉 ) 

Let’s just say I’m glad these little guys are going somewhere else other than my kitchen today because they’d be gone in no time! 😉

  1. I am so glad you shared this recipe! Just yesterday I was thinking of making pumpkin muffins (as opposed to the zucchini ones I made last time). Only I don’t have raisans so i am thinking I will substitute craisan instead (pumpkin craisan???). I’ll let you know if they turn out 🙂 Hope your meeting went well!

    • I’m not sure how they’d turn out since craisins are a bit more “tarty” or “sour”, but let me know! I want to try chocolate chips in them instead of raisins next time too.
