Family Reunion + Easy Dinner

Hope you’re all having a fabulous Saturday so far!  We spent the afternoon at a park for a family reunion.  Cody’s aunt and uncle planned it, and it was a great time!  Not to mention, the weather was absolutely perfect.  It was a pretty small group, but nonetheless was a fun day.  Unfortunately, I didn’t capture any photos… I know, absolutely uncalled for! 😉  I think I was too preoccupied with all the cute kids, good food, and playing volleyball!  Regardless of whether I have photos or not, I still feel as though I need to share how it all went! 

We all were asked to bring either a dessert or side dish, and Cody’s aunt and uncle provided sub sandwiches.  I’ve never seen a bigger sub sandwich in my life!  I think it was something like 4.5 feet?!  She said it was from Subway, and it was quite delicious!  We had some cherry tomatoes, Doritos, and watermelon on the side.  I cannot get enough of tomatoes these days.  They’re SO good!  Everyone and their mother (except us) grows them around here too, so they’re all over the place.  I am surely not complaining about it though!  There was some sort of fruit and cream dessert, mini eclairs, donut holes, and my trail mix cookies for dessert.  I enjoyed a small spoonful of the fruit and cream dessert and a donut hole.  (I had plenty of the trail mix cookies yesterday as I was baking them…oops. 😉 ) 

Cody and I had a really enjoyable time getting to visit with family we don’t get to see very often.  Some of Cody’s cousins have kids, and they’re all so adorable.  We also started a round of volleyball which was definitely one of my favorite parts of the afternoon!  I played volleyball in high school and intramural volleyball in college, so I miss it a lot.  When I get a chance to play now, I’ll jump on it.  For the amount of time I haven’t played, I thought I did pretty decent.  I kind of surprised myself! 

We came home, and I was planning on an easy dinner for the evening.  BLTs and sweet potato fries it was!  Delicious + healthy + easy = perfect for tonight.  I used turkey bacon instead of regular bacon, and I used spinach leaves instead of regular lettuce on whole wheat bread.  It was quite yummy and still satisfied us like a good ol’ traditional BLT would. 

For the sweet potato fries, I chopped sweet potatoes into “fries”, placed them on a cookie sheet, sprayed some cooking spray and sprinkled some cinnamon on them, and baked them in the oven for about 30 minutes at 400 degrees.  (I didn’t realize cinnamon could burn, so beware!)   

Obviously I’m still not off of my sweet potato kick… I don’t know if I will ever actually get off of this kick, but that’s okay by me.  🙂

My “Baby” Sis Goes to College

Ahhh this morning is already a better day than yesterday!  Ate an easy, but satisfying breakfast that included a small bowl of Grape Nuts cereal, a half of a banana, and cinnamon with vanilla soymilk.  And of course, some iced coffee to get the brain and body moving!

I visited with my hubs for a bit before he left to go play football with some friends, and got straight to my workout.  Today I decided on a new circuit workout that I discovered on one of my favorite blogs, Peanut Butter Fingers.  She calls it the “No Nonsense Circuit Workout”.  Whew, and was it “no nonsense” alright!  I “warmed up” with a fifteen minute jog around the neighborhood and then got to work on the circuits.  They looked like this:

  • Jumping jacks – 50
  • Squats with 25 lb. kettleball – 20
  • Squat jumps – 20
  • Alternating lunges – 20
  • Burpees – 15
  • Push ups (on my knees) – 25
  • Mountain climbers – 30
  • Crunches on exercise ball – 50

I went through it three times, and it took me about 25 minutes.  I was definitely a sweaty mess by the end!  Always a good way to start a day! 😉

Today I wanted to make a “tribute” to my baby sister.  She is leaving today to start her freshman year of college!  Wowee, has time flown!  It makes me sad to think of how fast she’s grown up (I can’t imagine how I’ll feel when I’m a parent! Yikes!), but I am so excited for her too. 

I feel like I just started my freshman year of college!!  How can she already be going off to college?  She’s still my “baby sister”!  Here’s a photo of us in Hawaii the summer before I went off to college.  Just seems like yesterday…

We can be quite the goofballs together…

We know we have to be related because we both have an undying love for peanut butter…

Oh ya, and can’t forget our many dance parties…

So many fun memories I’ll never forget with this girl.  I am so proud of her and can’t wait for her to be able to experience all the fun that goes along with growing up and going to college. 

I love you Lauren, and I’m so proud of you!
