Family Reunion + Easy Dinner

Hope you’re all having a fabulous Saturday so far!  We spent the afternoon at a park for a family reunion.  Cody’s aunt and uncle planned it, and it was a great time!  Not to mention, the weather was absolutely perfect.  It was a pretty small group, but nonetheless was a fun day.  Unfortunately, I didn’t capture any photos… I know, absolutely uncalled for! 😉  I think I was too preoccupied with all the cute kids, good food, and playing volleyball!  Regardless of whether I have photos or not, I still feel as though I need to share how it all went! 

We all were asked to bring either a dessert or side dish, and Cody’s aunt and uncle provided sub sandwiches.  I’ve never seen a bigger sub sandwich in my life!  I think it was something like 4.5 feet?!  She said it was from Subway, and it was quite delicious!  We had some cherry tomatoes, Doritos, and watermelon on the side.  I cannot get enough of tomatoes these days.  They’re SO good!  Everyone and their mother (except us) grows them around here too, so they’re all over the place.  I am surely not complaining about it though!  There was some sort of fruit and cream dessert, mini eclairs, donut holes, and my trail mix cookies for dessert.  I enjoyed a small spoonful of the fruit and cream dessert and a donut hole.  (I had plenty of the trail mix cookies yesterday as I was baking them…oops. 😉 ) 

Cody and I had a really enjoyable time getting to visit with family we don’t get to see very often.  Some of Cody’s cousins have kids, and they’re all so adorable.  We also started a round of volleyball which was definitely one of my favorite parts of the afternoon!  I played volleyball in high school and intramural volleyball in college, so I miss it a lot.  When I get a chance to play now, I’ll jump on it.  For the amount of time I haven’t played, I thought I did pretty decent.  I kind of surprised myself! 

We came home, and I was planning on an easy dinner for the evening.  BLTs and sweet potato fries it was!  Delicious + healthy + easy = perfect for tonight.  I used turkey bacon instead of regular bacon, and I used spinach leaves instead of regular lettuce on whole wheat bread.  It was quite yummy and still satisfied us like a good ol’ traditional BLT would. 

For the sweet potato fries, I chopped sweet potatoes into “fries”, placed them on a cookie sheet, sprayed some cooking spray and sprinkled some cinnamon on them, and baked them in the oven for about 30 minutes at 400 degrees.  (I didn’t realize cinnamon could burn, so beware!)   

Obviously I’m still not off of my sweet potato kick… I don’t know if I will ever actually get off of this kick, but that’s okay by me.  🙂

What’s for Breakfast: Peanut Butter ‘N’ Banana Pancakes

If any of you know me well, you know that I LOVE this little combo.

Or if you just know what’s good in life, you should know that the combination of peanut butter and banana is simply perfect.  By itself… on toast… in oatmeal… and my discovery this morning, in PANCAKES!  You heard it right, Peanut Butter ‘N’ Banana Pancakes!  Sounds amazing, right?  Well, I have to say, they were pretty darn amazing.  *Brush my shoulders off*  😉  

Peanut Butter ‘N’ Banana Pancakes


1 tablespoon peanut butter (melted a bit)

1/2 ripe banana

1 tablespoon brown sugar

1/8 cup whole wheat flour

1/4 cup oats

1/4 cup vanilla soymilk

1 tablespoon all-natural applesauce


Melt peanut butter in microwave for a few seconds in the microwave.  Mash banana and stir in with peanut butter.  Add the rest of the dry ingredients and mix well.  Then add wet ingredients and stir together.  Cover skillet with cooking spray and heat on the stove on medium heat.  Pour 1/4 cup batter in rounded cakes on the skillet.  Flip when they start to bubble through or when one side is cooked.  Add your favorite toppings such as nuts, powdered sugar, or maple syrup.  Makes 1 serving (2 small pancakes).


A hot mug of coffee accompanied my pancakes.  It was just as heavenly as I had imagined….
