Trail Mix Cookies

Remember these from yesterday?

Well, as promised, I am going to give you the recipe for these delicious “Trail Mix Cookies” this morning.  Like I said in yesterday’s post, we were asked to bring a dessert to a family reunion picnic today.  I had no idea what to bring to a family reunion picnic!  I was tossing all of these ideas around my head such as a pie, cake, brownies, bars, cookies…  I settled on cookies, but then I couldn’t decide what kind of cookies!  Desserts are always hard for me to just choose one because there’s so many that sound good to me.  (Thanks a lot, sweet tooth.) 

As I was looking in the pantry to figure out which ingredients I already had, I realized we had the basics (flour, sugar, vanilla, etc.) and also raisins, slivered almonds, and peanuts.  I immediately thought of a trail mix combination cookie.  I just needed some M & M’s to add some chocolate and make them look a little colorful.  The end result?  YUM!

Trail Mix Cookies

Ingredients:

1 cup (2 sticks) butter – the real stuff!

1 cup brown sugar

3/4 cup sugar

1 teaspoon vanilla

2 eggs

1 cup all-purpose flour

1 cup whole wheat flour

1 teaspoon baking soda

1 teaspoon salt

1/2 cup raisins

1/2 cup M & Ms

1/4 cup slivered almonds

1/4 cup peanuts

Directions:

Preheat oven to 350 degrees.  Cream softened butter and sugars together.  Add eggs and vanilla; stir well.  In a different bowl, mix together dry ingredients.  Add the dry ingredients to the other mixture; mix well.  Fold in raisins, M & Ms, almonds, and peanuts.  Grease a cookie sheet.  Roll dough in about 1 1/2 inch balls and place on cookie sheet.  Bake for 8-9 minutes.  Makes about 3-4 dozen.

What’s for Breakfast: Peanut Butter ‘N’ Banana Pancakes

If any of you know me well, you know that I LOVE this little combo.

Or if you just know what’s good in life, you should know that the combination of peanut butter and banana is simply perfect.  By itself… on toast… in oatmeal… and my discovery this morning, in PANCAKES!  You heard it right, Peanut Butter ‘N’ Banana Pancakes!  Sounds amazing, right?  Well, I have to say, they were pretty darn amazing.  *Brush my shoulders off*  😉  

Peanut Butter ‘N’ Banana Pancakes

Ingredients:

1 tablespoon peanut butter (melted a bit)

1/2 ripe banana

1 tablespoon brown sugar

1/8 cup whole wheat flour

1/4 cup oats

1/4 cup vanilla soymilk

1 tablespoon all-natural applesauce

Directions:

Melt peanut butter in microwave for a few seconds in the microwave.  Mash banana and stir in with peanut butter.  Add the rest of the dry ingredients and mix well.  Then add wet ingredients and stir together.  Cover skillet with cooking spray and heat on the stove on medium heat.  Pour 1/4 cup batter in rounded cakes on the skillet.  Flip when they start to bubble through or when one side is cooked.  Add your favorite toppings such as nuts, powdered sugar, or maple syrup.  Makes 1 serving (2 small pancakes).

  

A hot mug of coffee accompanied my pancakes.  It was just as heavenly as I had imagined….
