Oh boy, do I have a yummy snack to share with you today! I’m going to call it my “Nutty Granola”, because it truly is full of nuts but I swear it makes you a little “nutty” after you eat it too. 😉 (Ha, good one, right?)
Doesn’t it look heavenly?! Well let me tell you, it is! I could not.stop.eating.it. It truly is a great snack to eat on its own, with milk, on yogurt, on ice cream, or however you’d like! It’s full of fiber, healthy fats, protein, and tastes great too.
1 tablespoon crunchy peanut butter
1 tablespoon almond butter
2 tablespoons honey
1/2 cup old fashioned oats
1 packet lower sugar maple brown sugar oatmeal
1 tablespoon flax seeds (or you can use chia seeds)
2 tablespoons unsalted peanuts
1 tablespoon slivered almonds
Preheat oven to 325 degrees. Cover baking pan with cooking spray and set aside. Melt nut butters and honey together in microwave or on stove (careful not to burn them). Add oats and toss until oats are covered in the nut butters. Add in peanuts, almonds, and flax seeds. Stir until nuts are evenly throughout mixture. Spread on baking pan and place in oven for about 6-7 minutes. Let stand until it’s crispy. Makes four 1/4 cup servings.
